What is Alpha-Gal Syndrome?
Alpha-gal syndrome (AGS) is an allergic condition in which people are allergic to galactose-α-1,3-galactose, a sugar found in the tissues of all mammals except humans and other primates. It is also known as mammalian meat allergy, Alpha-gal allergy, red meat allergy, and tick bite meat allergy. The image stating that it takes 2-6hrs for a reaction, however reactions can be immediate and cause anaphylaxis. Patients have recently reported that ingestion isn't the only way to cause a reaction. Just smelling certain aromas from meat cooking has caused reactions. Make sure when you eat at restaurants that they do not prepare your food on the same surfaces as any restricted foods. Cross contamination occurs in most episodes where the patient knows what to avoid, but still has a reaction when eating "feathers or fins." (poultry or seafood)
